1 | Box Barilla® Fettuccine |
1 | Skinless Chicken breast, diced |
4 | Tbsp EVOO |
½ | Onion, diced |
1 | Garlic clove, minced |
8 | Oz mixed mushrooms, sliced |
2 | Cups baby spinach |
1 | ½ cup heavy cream |
1 | Cup Parmigiano cheese, grated |
1 | Tbsp nutmeg |
TIP | Salt, black pepper, to taste |

Method
Step 1
Bring cream to a simmer. Whisk in nutmeg, Parmigiano, sea salt, and black pepper. Turn off heat and set aside.

In a skillet over medium / high heat add 1 tbsp EVOO, chicken , salt and pepper. Cook chicken for 3-4 minutes or until browned and fully cooked, remove from the pan and set aside.

Step 3
Add remaining oil to the same skillet with onion. Sauté for 1-2 minutes then add garlic.

Add mushrooms and sauté for 5 minutes, season with salt and pepper. Return chicken to the skillet. Return sauce to the skillet.

Meanwhile, cook pasta according to package directions and drain. Toss pasta with sauce, spinach and remaining cheese.
