3Cups diced butternut squash (½ for puree, ½ for roasting)

3Tablespoons Extra Virgin Olive Oil, Divided

1 ½Cups Vegetable Broth

1Teaspoon Nutmeg

1Burrata cheese

½Cup pistachio nuts, chopped

To TasteSalt & White Pepper

Method

Step 1

Pre-heat oven to 425° F and roast ½ of the butternut squash with 2 tablespoons olive oil, salt, and pepper until golden brown and fully cooked, about 6-7 minutes.

Step 2

Meanwhile, in a small saucepan add broth, nutmeg, and remaining butternut squash. Bring to a simmer and let simmer for 5 minutes. Season with salt and pepper.

Step 3

Add the broth mixture to a blender with remaining olive oil and puree.

Step 4

Cook pasta according to package directions, drain and toss with the sauce.

Step 5

Top with burrata cheese, roasted butternut squash and pistachio nuts.
