4tablespoons Extra Virgin Olive Oil

1Vidalia onion, small dice

1Pound Italian Sausage

1Teaspoon crushed red pepper flakes

128 oz. San Marzano tomato, chopped

½Cup dry white wine

¼Cup Parmigiano, grated

¼Cup parsley, chopped

To TasteSea Salt & Black Pepper

Method

Step 1

Bring a large pot of salted water to a rolling boil. Cook pasta according to package directions; reserve 1 cup of pasta water. Drain.

Step 2

Meanwhile, in a skillet over med/high heat add olive oil and onion, and cook for 2-3 min.

Step 3

Add sausage and crushed red pepper flakes. Cook for 4-5 min or until sausage is browned.

Step 4

Add white wine and deglaze by half.

Step 5

Add tomatoes and cook an additional 5-10 min.

Step 6

Add pasta to sauce and a couple splashes of pasta water with half of the cheese and parsley. Mix well; if the sauce looks dry, add more pasta water. Taste and adjust seasonings as needed.

Step 7

Top with remaining parsley and cheese.
