4Tablespoons Extra Virgin Olive Oil, Divided

1Pound chicken breast, shredded

1Medium-sized sweet onion, chopped

2Cloves garlic, chopped

1Tablespoon sazon seasoning

1Teaspoon paprika

¼Cup apple cider vinegar

5Cups chicken stock

4Cups water

112-ounce can hatch green chilies, chopped

216-ounce cans great northern white beans

2Bunches green onion, sliced thin, divided

1Cup Monterrey jack cheese, shredded

Chef Tip

If you cannot find sazon seasoning, use a blend of cumin, coriander, garlic powder, and paprika or turmeric.

Step 1

In a large-sized stockpot or Dutch oven heat 1 tablespoon of olive oil. Season chicken with salt and pepper, add to the pot and brown on all sides until cooked through (165 degrees Fahrenheit). Remove chicken from the pot and set aside to cool. Once the chicken is cool, shred.

Step 2

In the same pot add remaining olive oil, onion, garlic, ½ of the green onions, salt, and pepper; cook gently over medium heat for 2-3 minutes until the onion softens. Add cider vinegar and cook for an additional minute.

Step 3

Add beans, chicken, chicken stock, water, green chilies, sazon seasoning, paprika and season to taste. Bring mixture to a boil, add pasta to the pot, and cook according to pasta package directions.

Step 4

Turn off heat, top with cheese and remaining green onions.
