Barilla Open Recipes Traditional Carbonara Spaghetti

Ingredients

Serves 4

1 box Barilla® Thick Spaghetti
2 tbs Extra virgin olive oil
1 Small onion, chopped
1 or 2 cloves Garlic, chopped
1 can San Marzano tomatoes

Eggplant Meatballs

2 tbs Olive oil
1 onion (100 gr) Finely diced
1 medium [12 oz] Unpeeled eggplant, [12 oz] diced in ½ inch cubes
1 cup Walnuts, toasted and roughly chopped
2 tbs Bread crumbs
3 oz Firm tofu, puréed
1 lemon Lemon zest
1 tbs Fresh parsley chopped
1 tbs Fresh oregano chopped
1o leaves Basil, chopped
To taste Salt and pepper

Method

In a saucepot gently fry onion with olive oil for five minutes, add 1 clove of chopped garlic, keep sautéing and one minute later add crushed tomatoes. Add less than one cup of water, salt and pepper and bring to simmer.
