150 g (5,3 oz Barilla® GF Elbows (or small short pasta) or ditalini GF
200 g White beans (dry)
200 g Cannellini beans (dry)
200 g Borlotti beans (dry)
30 ml E.V.O.O
200 g Onion
100 g Carrots
100 g Celery
1 sprig Thyme
to taste Salt and pepper

Method

Step 1

Soak all types of beans -if used dry- in cold water overnight

The next day, clean and chop the onion, carrot and celery. Heat the oil in a saucepan, sauté the vegetables. For a richer taste, you can also add bacon / pancetta into the “soffritto”and then the drained beans and the thyme, washed and dried, with the leaves removed from the stem.

Cover with the cold water and cook. Ten minutes before the beans are cooked (approx. after 50 minutes), season with salt and pepper and add the ditalini. Let cook according to package directions.
