To prepare the pesto alla Genovese, blend the pine nuts and garlic in a blender. Add the basil leaves, washed and dried, salt to taste, two ice cubes to preserve the green colour, and the EVO without turning off the blender. Add the grated Parmigiano and Pecorino cheeses and adjust the density by adding more olive oil if necessary.
