75 g | Basil leaves |
25 g | Pine nuts |
50 g | Kosher Parmigiano cheese, grated |
25 g | Kosher Hard Sheep Cheese |

40 ml | Extra virgin olive oil (EVOO) |
For the béchamel sauce
500 ml | Kosher milk |
30 g | Kosher butter |
25 g | All-purpose flour |

PREPARE THE PESTO: In a blender, combine the pine nuts and garlic. Add the basil and olive oil without stopping the blender. Add half the Parmigiano and the hard cheese. Blend until smooth, adding more oil if necessary.
