Ingredients

Serves 4

8 Barilla Lasagne Sheets
1 jar Barilla Vegan Basil Pesto
100 g Potatoes
50 g Green beans
To taste Parmigiano Reggiano cheese, grated (this is naturally lactose-free)

For the béchamel

500 ml Soy milk
30 g Lactose-free butter or margarine
25 g Flour
To taste Nutmeg
To taste Salt and pepper

Method

Step 1

Here are the four easy steps to cook a delicious lactose-free Pesto Lasagne:

Peel and cut the potatoes into cubes. Clean the green beans, and cut them into small pieces. Blanche the potatoes and green beans in boiling water until al dente and then drain.

Prepare the béchamel: melt the margarine in a pot, add the flour and mix well. Add the boiling soy milk, stirring constantly to avoid lumps and bring to boil. Season with salt, a little of nutmeg and salt, then set aside.

Step 4

Grease a baking pan with a little butter and add the first layer of potatoes, green beans and béchamel. Add a drizzle of Pesto. After that add a layer of Lasagne sheets, and then again another layer of sauce. Sprinkle with Parmigiano Reggiano and continue to alternate layers of Lasagne sheets and vegetable mix.

Step 5

Top with layer of sauce, sprinkle with Parmigiano Reggiano and bake in oven at 180° for 20 minutes. When it is perfectly baked, golden and crunchy, wait 10’ before serving.
