400 g | Barilla Arrabbiata sauce |
200 g | Smoked pancetta, diced into cubes |
80 ml | Cream |
1/2 glass | Vodka |
1 | Small brown onion |
1 | Chilli |
To taste | Parmigiano Reggiano |
To taste | Extra Virgin Olive Oil |
To taste | Salt and pepper |

Start with preparing the “soffritto” or “mirepoix”: slice the onion and chop finely. In a pan, heat up some E.V.O.O and cook until it is translucent in colour.

Pour in the Arrabbiata sauce and reduce the sauce over a low heat, adjust salt to taste. Mix in the cream and stir until the sauce has a creamy and soft texture.

Bring a large pot of water to a boil, add rock salt and cook pasta according to package directions. Drain when “al dente”, reserving some pasta water.
