400 g | Barilla® Bolognese Sauce |
300 g | Lentils (soaked overnight) or 400g canned lentils (drained) |
1/3 | Onion, peeled and chopped |
1 | Garlic clove, crushed |
To taste | Extra Virgin Olive Oil |
To taste | Salt, pepper |
For the béchamel sauce
1.5 L | Dairy-free milk (try soy or almond) |
75 g | Margarine |
75 g | Flour |
To taste | Grated nutmeg, salt |
For the topping
100 g | Nutritional yeast |

Method
Step 1
Here are four easy steps for the perfect vegan Lasagne bolognese:

MAKE THE BECHAMEL Gently bring the milk alternative to the boil in a medium saucepan. In a separate saucepan, gently melt the margarine. Add flour and cook over low heat for a few minutes. Once milk alternative is boiling, transfer a little at a time to the margarine mixture, continuously whisking to prevent lumps. Bring mixture to the boil and stir continuously. Simmer for 10 minutes and adjust seasoning if desired. Pass béchamel through a sieve to remove any lumps.

MAKE THE BOLOGNESE SAUCE Add oil to a large fry pan and when hot, add the onion and garlic and cook for 2-3 minutes. Add lentils and cook over medium heat for a few minutes, adding salt and pepper to taste. Combine with Barilla’s Bolognese sauce and bring to a simmer.

ASSEMBLE THE LASAGNE In a rectangular baking dish, spread a thin layer of béchamel on the bottom of the dish, then add Lasagne sheets. Add béchamel, then a quarter of the Bolognese sauce and nutritional yeast. Repeat this process four or five times.

BAKE Bake Lasagne in pre-heated oven at 180°C for 20-25 minutes and allow to rest for 5 minutes before serving.
