Method
Step 1
Here are six easy steps to cook a delicious and Lactose-free carbonara pasta:

In a mixing bowl, beat egg yolks with a pinch of salt and 2/3 of the grated Pecorino cheese.

Cook the guanciale or pancetta cubes or sticks in a large skillet over medium heat. Go on until the fat has melted. Last but not least, fry it lightly.

Turn off the heat, add the egg mixture and the cooking water you previously set aside. Stir everything for just about 30 seconds.
