½ small | onion diced |
40ml | extra virgin olive oil |
150g | package fresh wild mushrooms* |
60g | prosciutto** julienne |
100g | heavy cream |
To taste | Salt and black pepper to taste |
40g cup | Parmigiano cheese grated |
20g | parsley chopped |

Method
Step 1
Bring a large pot of water to boil
Step 2
Meanwhile sauté the onion in olive oil until translucent, about four minutes
Step 3
Add mushrooms and sauté for 2-3 minutes or until lightly browned
Step 4
Add the prosciutto and render for 1 minute then add the cream
Step 5
Season with salt and black pepper
Step 6
Cook the tortellini according to the package directions, drain and toss with sauce
Step 7
Stir in Parmigiano cheese and parsley before serving
