1 box Barilla® Three Cheese Tortellini - Family Size
2 1/bunch Asparagus
1/2 cup Scallion White Part Only
3 tbs . Extra Virgin Olive Oil
1 small Zucchini Diced Seeded
2 Plum Tomatoes Diced Peeled
1/2 cup Parmigiano-Reggiano Cheese Grated

Method

Step 1

Bring a large pot of water to a boil

Step 2

Remove the asparagus tips and cut the remaining part into ¼ inch long pieces

Step 3

Slice scallions into small rings

Step 4

Sauté the scallions, zucchini and asparagus in oil in a medium skillet over medium heat for about 8 minutes

Step 5

Add tomatoes and sauté for 2 more minutes

Step 6

Season with salt and pepper

Step 7

Cook Three Cheese Tortellini according to package directions

Step 8

Drain and add to the vegetable sauce

Step 9

Sprinkle with cheese and serve
