Puttanesca Pasta Gluten-free

Puttanesca pasta is a dish of Italian cuisine with an intense and bold flavour, but if you are gluten intolerant it may seem difficult to enjoy it. Ingredients

Serves 4

320g Barilla Gluten Free Penne RIgate
1 Jar Barilla Arrabbiata sauce
50g Taggiasca olives, pitted
30g Capers, salted
30ml Extra Virgin Olive Oil
25 Anchovy fillets in oil
20g Parsley, chopped
1 Clove of garlic
TIP Chilli and salt, to taste

Method

Step 1

Thinly slice the garlic and fry it in a pan with oil and chilli, being careful not to burn it. If you use fresh chilli, you need to cut it into slices. If, on the other hand, you prefer dried chilli, crush it using disposable gloves.

Step 2

Once the garlic and chilli are fried, add the capers (after having washed them off the salt in running water and roughly chopped) and the anchovy fillets and continue cooking for another two minutes.

Step 3

Add the Arrabbiata sauce, and salt (to taste) and cook over high heat for about 5 minutes, stirring occasionally and adding the olives.

Step 4

Meanwhile, cook the pasta al dente in boiling salted water. Drain and combine together with the sauce and a sprinkling of chopped parsley.
