Puttanesca Pasta Open

Ingredients

Serves 4

320g Barilla Gluten Free Penne RIgate
500g Tinned tomatoes
50g Taggiasca olives, pitted
30g Kosher salted capers
30ml Extra Virgin Olive Oil
20ml Gluten free soy sauce
10g Seaweed powder
20g Parsley, chopped
1 Clove of garlic
TIP Chilli and salt, to taste

Method

Step 1

Thinly slice the garlic and fry it in a pan with oil and chilli, being careful not to burn it. If you use fresh chilli, you need to cut it into slices. If, on the other hand, you prefer dried chilli, crush it using disposable gloves.

Step 2

Once the garlic and chilli are sautéed, add the capers (after having washed the salt off them in running water and roughly chopped), the nori seaweed powder and the soy sauce. Continue cooking for another two minutes.

Step 3

Add the tinned tomatoes and salt (to taste) and cook over high heat for about 5 minutes, stirring occasionally and adding the olives.

Step 4

Meanwhile, cook the pasta al dente in boiling salted water. Drain and combine together with the sauce and a sprinkling of chopped parsley.
