320g Barilla Spaghetti No.5
200g Cod, diced
100g Halal canned tuna in oil, drained and flaked
100ml Alcohol-free white wine
200g Tomato Pulp
150g Tomatoes, seeded and cut into strips
40ml Extra Virgin Olive Oil
1 Garlic clove
20 g Parsley, chopped
1 Bunch basil, roughly torn
TIP Salt and pepper, to taste
TIP Optional: chilli oil or crushed chilli flakes to garnish

Method

Step 1

Sauté the garlic in the olive oil. Add the cod and sauté for 2 minutes. Add the tomatoes and alcohol-free wine and let it evaporate. Add the tomato pulp and stir well for 2 minutes.Add the tuna and let the sauce cook for 5 minutes. Stir it once. Remove the garlic, season with salt and pepper and add parsley, basil. The sauce should retain some of its liquidity.

Step 2

Cook the pasta in boiling salted water until "al dente" according to package directions.

Drain the pasta, add the sauce and sauté for 1 minute. Garnish with the chopped basil and parsley. Serve with chilli oil or crushed chilli flakes, if desired.
