320g | Barilla Penne Rigate |
650g | Cherry tomatoes, in mixed colours |
150g | Lactose-free feta cheese |
150g | Zucchini, diced in 1cm cubes |
40g | Pistachio, roughly chopped (or grated lemon zest) |
20ml | Extra Virgin Olive Oil |
2 | Slices lemon, 1/2 cm thick |
10 | Basil leaves |
5g | Fresh oregano, freshly chopped |
TIP | Salt and pepper, to taste |

Method
Step 1
Preheat oven to 200° C and bring a pot of salted water to boil.
Step 2
Place zucchini, tomatoes, lemon and oregano in a baking dish, season with salt, pepper and half the olive oil. Place feta right in the middle of the dish. Bake in the oven for 20 minutes.

Meanwhile cook pasta according to package directions. One minute before pasta is fully cooked add half cup of cooking liquid to feta and vegetable mixture, and with the help of a spoon smash the cheese and stir together.

Fold in drained pasta, mix well, add basil and drizzle with remaining extra virgin olive oil.
