Ingredients

Serves 4

320g Barilla Penne Rigate
650g Cherry tomatoes, in mixed colours
150g Lactose-free feta cheese
150g Zucchini, diced in 1cm cubes
40g Pistachio, roughly chopped (or grated lemon zest)
20ml Extra Virgin Olive Oil
2 Slices lemon, 1/2 cm thick
10 Basil leaves
5g Fresh oregano, freshly chopped
TIP Salt and pepper, to taste

Method

Step 1

Preheat oven to 200° C and bring a pot of salted water to boil.

Step 2

Place zucchini, tomatoes, lemon and oregano in a baking dish, season with salt, pepper and half the olive oil. Place feta right in the middle of the dish. Bake in the oven for 20 minutes.

Step 3

Meanwhile cook pasta according to package directions. One minute before pasta is fully cooked add half cup of cooking liquid to feta and vegetable mixture, and with the help of a spoon smash the cheese and stir together.

Fold in drained pasta, mix well, add basil and drizzle with remaining extra virgin olive oil.

Top with pistachios before serving (or grated lemon zest if preferred).
