320g Barilla Penne Rigate
650g Cherry tomatoes
150g Extra firm tofu
60ml Plant-based cream
60g Kale, chopped
20ml Extra Virgin Olive Oil
2 Slices lemon, 1/2 cm thick
TIP Salt, pepper, oregano and chilli flakes, to taste

Method

Step 1

Preheat oven to 200° C and bring a pot of salted water to boil.

Step 2

Place kale, tomatoes, vegan cream, lemon and oregano in a baking dish, season with salt, pepper and half the olive oil, placing the tofu right in the middle of the dish. Bake in the oven for 20 minutes.

Step 3

Meanwhile cook pasta according to package directions. One minute before pasta is fully cooked add half cup of cooking liquid to the tofu vegetable mix, and with the help of a spoon smash the cheese and stir.

Fold in drained pasta, mix well, and drizzle with remaining olive oil.

Step 5

Top with crushed chilli flakes before serving, and enjoy.
