320g | Barilla Penne Rigate |
650g | Cherry tomatoes |
150g | Extra firm tofu |
60ml | Plant-based cream |
60g | Kale, chopped |
20ml | Extra Virgin Olive Oil |
2 | Slices lemon, 1/2 cm thick |
TIP | Salt, pepper, oregano and chilli flakes, to taste |

Method
Step 1
Preheat oven to 200° C and bring a pot of salted water to boil.
Step 2
Place kale, tomatoes, vegan cream, lemon and oregano in a baking dish, season with salt, pepper and half the olive oil, placing the tofu right in the middle of the dish. Bake in the oven for 20 minutes.

Meanwhile cook pasta according to package directions. One minute before pasta is fully cooked add half cup of cooking liquid to the tofu vegetable mix, and with the help of a spoon smash the cheese and stir.
