320g Barilla Gluten Free Penne Rigate
650g Cherry tomatoes
150g Extra firm tofu
150g Zucchini, diced in 1cm cubes
90ml Plant-based cream
40g Pistachio, roughly chopped
20ml Extra Virgin Olive Oil
2 Slices lemon, 1/2 cm thick
1 Garlic clove
TIP Salt, pepper, oregano, to taste

Method

Step 1

Preheat oven to 200° C and bring a pot of salted water to boil.

Step 2

Place tomatoes, garlic and zucchini in a baking dish, season with salt, pepper and half the olive oil, place tofu right in the middle. Bake in the oven for 20 minutes. Remove garlic clove at the end.

Step 3

Shred the basil and grated lemon zest and mix very well.

Meanwhile cook pasta according to package directions. One minute before pasta is fully cooked add half cup of cooking liquid to tofu vegetable mixture, and with the help of a spoon smash the cheese and stir.

Fold in drained pasta, mix well, sprinkle chopped pistachio and drizzle with remaining extra virgin olive oil.
