Ingredients

Serves 4

320g Barilla Gluten Free Fusilli or Penne
500g Tomato pulp
250g Canned chickpeas
80g Onion, peeled and chopped
40g Tomato concentrate
30ml Extra Virgin Olive Oil
20g Capers, chopped
15g Mustard
TIP Oregano, salt and pepper, to taste
TIP Optional: chilli oil or chilli flakes to garnish

Method

Step 1

Start by mashing the chickpeas with a potato masher or fork and season them with mustard and chopped capers.

Step 2

Heat the olive oil in a pan and sauté the onion with the whole garlic clove. Once the onion has turned golden brown, add the chickpeas, the capers, the tomato pulp and concentrate, and the oregano, and season with salt and pepper. Cook the sauce over high heat for about 15 minutes, stirring occasionally and adding water if necessary. At the end, remove the garlic.

Step 3

Next, bring a pot of salted water to a boil and cook the Fusilli until it is al dente. Once the pasta is cooked, drain it.

Finally, toss the pasta with the tomato sauce and serve.
