Ingredients

150g Barilla Vermicelli
2 tbsp Unsalted butter
1 L Full-fat milk
200 ml Fresh cream (or whipping cream)
100 g Sugar (adjust to taste)
1 tsp Vanilla extract or rose water (optional)
50 g Chopped nuts (pistachios, almonds, cashews – roasted)
50 g Raisins or chopped dates (optional)
1 tsp Ground cinnamon (optional for garnish)

For Topping

200 ml Whipping cream (lightly whipped)
1 tbsp Sugar
Crushed pistachios for decoration

Method

Step 1

Toast the Vermicelli: In a large pan, melt the butter over medium heat. Add the Barilla Vermicelli and stir continuously until it turns golden brown. Be careful not to burn it.

Step 2

Prepare the Milk Mixture: In a separate saucepan, heat the milk and sugar together until the sugar dissolves. Add vanilla or rose water if desired.

Step 3

Cook the Vermicelli: Pour the hot milk mixture over the toasted vermicelli. Stir gently and cook over low heat for 7–10 minutes until the vermicelli becomes soft and the mixture thickens slightly.

Step 4

Add Cream and Nuts: Add the fresh cream, nuts, and raisins. Mix well and simmer for 2 more minutes.

Step 5

Bake (Optional – for Umm Ali style): Transfer the mixture into a baking dish. Spread the whipped cream on top and sprinkle crushed pistachios. Bake in a preheated oven at 180°C for about 10–15 minutes or until the top is lightly golden.

Step 6

Serve: Serve warm or chilled, topped with extra nuts and a touch of cinnamon if desired.
