Ingredients

Serves 4

320 g Barilla® Spaghetti No.5
250 g Eggplant, diced in 1cm cubes
4 Egg Yolks
5 ml Extra Virgin Olive Oil
5 g Sumac
To taste Salt
To taste Black pepper

Method

Step 1

Here are six easy steps to cook a delicious and Kosher carbonara pasta:

In a bowl, beat the egg yolks and season with salt and pepper to taste. Then, set aside.

Cook the Spaghetti "al dente" in a large pot of boiling salted water. Drain and reserve some of the cooking water.

Step 4

Fry the eggplant cubes in olive oil until golden (about 10 minutes). Then pat dry with paper towel and set aside.

Step 5

Off the heat mix together the Spaghetti and egg mixture alongside some of the cooking water. Mix well until the sauce is creamy and emulsified.

Step 6

Toss together the fried eggplant with the sumac.

To serve, top the Spaghetti with a generous helping of the fried eggplants and enjoy.

Tip
