320g | Barilla® Spaghetti No.5 |
250 g | Eggplant, diced in 1 cm cubes |
200 ml | Dairy-free cream |
20 ml | Extra Virgin Olive Oil |
10 ml | Soy sauce or Tamari sauce |
5 g | Turmeric |
5 g | Kala Namak |
To taste | Black pepper |
To taste | Salt |

Method
Step 1
Here are six easy steps to cook a delicious and Vegan carbonara pasta:

Cook the Spaghetti "al dente" in a large pot of boiling salted water. Drain and reserve some of the cooking water.

In a separate pan, toast turmeric and kala namak for 30 seconds. Then, pour in dairy-free cream and stir together over a low heat to avoid burning. Stir until the sauce cooks to a delicate yellow colour (similar to egg yolk).

Fry the eggplant cubes in olive oil until golden, this will take about 10 minutes.

In the last minute, add the soy sauce and cook together for a few seconds.

Toss the Spaghetti with the 'egg' mixture until creamy and emulsified, add a little of the cooking water to adjust the creaminess and salty flavour.

To serve, top the Spaghetti with a generous helping of the fried eggplants and enjoy.
