320 g | Barilla® Spaghetti No.5 |
150 g | Guanciale (cured unsmoked pork jowl) |
4 | Large egg yolks |
100 g | Lactose Free Pecorino or other aged sheep milk cheese (naturally lactose-free) |
To taste | Black pepper |
To taste | Salt |

Method
Step 1
Here are six easy steps to cook a delicious and Lactose-free carbonara pasta:

In a mixing bowl, whisk egg yolks with 2/3 of the grated cheese and a dash of pepper to taste.

Slice the Guanciale into 2mm pieces. Add them to a large pan over medium heat (with no oil), gently frying until the fat has melted and the Guanciale has browned.

Cook the Spaghetti "al dente" in a large pot of boiling salted water. Drain and reserve some of the cooking water.

Combine the pasta with the Guanciale in the pan and mix.

Turn off the heat then add the egg mixture alongside some of the cooking water. Mix well until the sauce is creamy and emulsified.
Step 7
Sprinkle the remaining lactose-free cheese on top and serve. Buon Appetito!
