Ingredients

Serves 4

320 g Barilla® Spaghetti No.5
150 g Guanciale (cured unsmoked pork jowl)
4 Large egg yolks
100 g Lactose Free Pecorino or other aged sheep milk cheese (naturally lactose-free)
To taste Black pepper
To taste Salt

Method

Step 1

Here are six easy steps to cook a delicious and Lactose-free carbonara pasta:

In a mixing bowl, whisk egg yolks with 2/3 of the grated cheese and a dash of pepper to taste.

Step 3

Slice the Guanciale into 2mm pieces. Add them to a large pan over medium heat (with no oil), gently frying until the fat has melted and the Guanciale has browned.

Step 4

Cook the Spaghetti "al dente" in a large pot of boiling salted water. Drain and reserve some of the cooking water.

Step 5

Combine the pasta with the Guanciale in the pan and mix.

Step 6

Turn off the heat then add the egg mixture alongside some of the cooking water. Mix well until the sauce is creamy and emulsified.

Step 7

Sprinkle the remaining lactose-free cheese on top and serve. Buon Appetito!

Lactose-free pasta carbonara is a delicious alternative for those suffering from lactose intolerance.
