320 g (11,3 oz) | Barilla® Penne rigate |
20 ml | E.V.O , divided |
150g (1,5) | medium size zucchini, 1 cm diced |
650 g | multicolor cherry tomatoes |
2 slices ½ cm thick | lemon |
150 g | Lactose free feta cheese, whole |
40 g | pistachio, roughly chopped |
5 g | fresh oregano, roughly chopped |
10 leaves | basil, torn |
to taste | Salt and black pepper |

Method
Step 1
Here are five easy steps for the perfect lactose-free baked feta cheese recipe:

Preheat oven to 200° C and bring a pot of salted water to boil.

Place zucchini, tomatoes, lemon and oregano in a baking dish, season with salt, pepper and half E.V.O, place lactose free feta right in the center. Bake in the oven for 20 minutes.

Step 4
Meanwhile cook pasta according to package directions. One minute before pasta is fully cooked add half cup of cooking liquid to feta veggies mixture, and with the help of a spoon smash the cheese and stir.
