150 g | Pork shoulder, minced |
150 g | Ground beef |
40 g | Carrot, peeled and minced |
40 g | Celery, minced |
40 g | Yellow onion, peeled and minced |
100 ml | Extra virgin olive oil (EVOO) |
150 g | Cured pork fat (lard), minced |
90 g | Tomato purée |
100 ml | Red wine |
50 g | Lactose-free Parmigiano Reggiano cheese, grated |
2 | Fresh bay leaves coarsely chopped |
To taste | Salt and black pepper |
