Barilla® Penne alla Norma
Ingredients
Serves 4
340g | Barilla® Penne Rigate |
250g | Eggplant |
40g | Salted ricotta |
350g | Peeled tomato |
50g | Onion |
35ml | Extra virgin olive oil (evoo) |
5 leaves | Basil |
1 clove | Garlic |
To taste | Salt and pepper |

Method
Step 1
Cut the eggplant into cubes and lightly salt. Leave them to draw out excess water
Step 2
Add the oil in a frying pan and sauté the onion and garlic
Step 3
Add the eggplant, tomato pulp, salt and pepper and cook for 15-20 minutes
Step 4
Meanwhile, cook the penne in salted boiling water and when cooked, toss the penne with the sauce
Step 5
Add the basil and grated salted ricotta
