Barilla® Whole Grain Fusilli with Cherry Tomatoes, Mozzarella and Basil

Ingredients

Serves 4

340g Barilla® Whole Grain Fusilli
200g Cherry tomatoes, halved
140g Mozzarella cheese, diced
7 leaves Fresh basil, cut into strips
3 tablespoons Extra virgin olive oil (evoo), divided
1 clove Garlic, pressed

Method

Step 1

Cook Whole Grain Fusilli according to package directions

Step 2

Meanwhile, heat 2 tablespoons olive oil in a large skillet over medium heat. Add garlic and sauté until slightly yellow, about 2 minutes

Step 3

Remove garlic from skillet. Add tomatoes to the skillet and sear until slightly blistered, about 3-4 minutes. Season with salt and pepper

Step 4

Drain pasta and add to the skillet. Remove skillet from heat and mix well

Step 5

Add cheese, basil and remaining olive oil to the pasta, toss to combine
