Cuori Barilla with Cream Anglaise Soup and Berries

120gms | Barilla Cuori pasta |
1lit | Water |
30gms | Sugar |
1 | Cinnamon stick |
1/2 | Vanilla pod |
1 | Lemon, only the zest |
mint leaves for decoration | |
150gms | Berries |
For the cream: | |
400ml | milk |
100ml | cream |
90gm | egg yolk (5 eggs) |
100gms | sugar |
5gms | corn starch (optional) |

Method
Step 1
For the cream: heat the milk and cream with the vanilla.
Step 2
Beat the egg yolks with the sugar, ad the starch, pour over the liquid and cook the mixture, stirring constantly at a temperature of max 84 degrees C.
Step 3
Filter the cream and let it cool.
Step 4
For the pasta: bring to the boil the water, sugar, cinnamon, vanilla, lemon zest, in a sauce pan
Step 5
Cook the pasta for the time indicated in the package, drain, and serve.
Step 6
Take a bowl, put the cream in the centre, followed by the berries and lastly the previously cooked pasta.
Step 7
Decorate with a mint leaf or if we we want with a few drops of traditional balsamic vinegar.
