Cuori Barilla with Tomato confit cream, basil oil, citrus fruits and burrata

Ingredients

Serves 4

320g of Barilla Cuori pasta
20 ripe cherry tomatoes
2 garlic cloves
60g of extra virgin olive oil
1 citrus fruit (lime or lemon)
salt and fresh thyme to taste
2g of icing sugar
50g of Basil
200g of burrata

Method

Step 1

Arrange the previously washed cherry tomatoes in a baking tray, seasoned with salt, garlic, sugar, extra virgin olive oil and fresh thyme, cook in the oven at 120°C for about 60 minutes.

Step 2

Blanch the basil in boiling water, cool quickly in water and ice to keep the colour. Blend with extra virgin olive oil.

Step 3

Cook the pasta in plenty of salted water for the time indicated on the package. In the meantime, blend the cherry tomatoes with the extra virgin olive oil until it gets creamy.

Step 4

Once cooked, add the pasta to the tomato cream, grate the citrus fruits and sautè for a few seconds.

Step 5

Arrange the pasta on the plate and add the chopped burrata and finally the basil oil.
