Cajun Ziti with Chicken

Cajun pasta is so hot right now.

1 box ziti
4 tablespoons extra virgin olive oil
4 chicken thighs, bone and skin off
1 Vidalia onion, julienne
1 red pepper, julienne
6 domestic mushrooms, quartered
3 cloves garlic, chopped
1 tablespoon Cajun seasoning
½ cup white wine
½ cup heavy cream
½ cup Parmigiano cheese, grated
1 tablespoon chopped parsley
Salt and black paper, to taste

1. Bring a large pot of water to a boil
2. Meanwhile, in hot skillet, brown the chicken in olive oil, over high heat for approximately 5 minutes
3. Add vegetables and Cajun seasoning, sauté for 3 minutes
4. Stir in wine, season with salt and pepper
5. Reduce liquid by half, add cream and bring to simmer
6. Meanwhile, cook pasta according to directions
7. Drain and toss with sauce
8. Stir in cheese and sprinkle parsley before serving
